Ingredients


2 Ѕ tablespoons of Red-wine vinegar


1 tablespoon of Extra-virgin olive oil


1 Ѕ teaspoons of Chopped fresh dill, or oregano


cup Sliced ripe black olives


1/8 teaspoon Salt


1/8 teaspoon Freshly ground pepper


3 cups Chopped Romaine lettuce


1 ј cups of Chopped cooked Chicken


1 medium Tomato, chopped


Ѕ teaspoon Garlic powder


Ѕ medium Cucumber, peeled, seeded and chopped


cup finely Chopped red onion


cup Crumbled feta cheese


Method


In a large bowl mix vinegar, oil, garlic powder, salt, pepper and dill together and keep it aside.


Chop lettuce and the other vegetables.


Now add the chicken pieces to the vinegar mixture and toss well.


Then add the vegetables and feta cheese to the salad and toss.

Noodle and Vegetable Stir Fry

Ingredients


300 g Tofu, drained


1 tbs Peanut oil


150 g Broccoli, cut into small florets


150 g Thin egg noodles


2 Garlic cloves, crushed


2 tablespoons Sweet Indonesian soy sauce


250 g Chinese cabbage, hard core removed and finely shredded


2 tablespoons Fresh lemon juice


Ѕ bunch Chinese Broccoli, stems trimmed and cut into 6 cm-thick lengths


Method


Cut tofu into bite size pieces and set them aside.


In a heatproof bowl, place the noodles, cover them with a lot of warm water.


Separate the strands with your hands, drain and keep aside.


Heat oil in a frying pan, then add tofu and cook it for about 2 minutes till they are golden in color.


Remove the tofu from the frying pan.


Now add broccoli to the pan and stir fry for about 2 to 3 minutes, till they are tender, yet crisp.


Now add garlic to the broccoli and stir fry for another 30 to 45 seconds.


Then add the soy sauce, lemon juice and let it come to a boil.


At last add the noodles, cabbage and Chinese broccoli.


Stir fry till the cabbage and Chinese broccoli become tender, remove from heat.


Add tofu to the noodles and serve immediately.


Chicken Soup

1 tablespoon Extra-virgin olive oil


8 ounces Chicken tenders, cut into bite-size chunks

2 Plum tomatoes, chopped


1 can Reduced-sodium chicken broth


cup Dry white wine


2 tablespoons Tiny pasta


1 Ѕ cups Baby spinach


1/8 teaspoon Salt


Method


In a large saucepan, heat oil over medium heat.


Add chicken to the oil and cook, until the chicken is brown in color. Remove the chicken from the saucepan and keep it aside.


Now add zucchini, shallot, seasoning to the frying pan. When the vegetables have softened a little add salt and fry for 2 to 3 minutes.


Then add tomatoes, chicken broth, wine and pasta to the vegetables and bring it to a boil.


Once the ingredients come to a boil, reduce the heat and let the pasts cook, till tender.


At last add spinach, cooked chicken and cook for about 3 to 4 minutes.


Serve warm.
